Élise Marchand learned to cook in her grandmother's bouchon in the Croix-Rousse, where a single pot of pot-au-feu could feed thirty regulars and the seasons announced themselves through the back door.
She left for Valence at sixteen to stage under Anne-Sophie Pic, then to Paris for L'Arpège under Alain Passard — four years that taught her the vegetable as a noble thing. A brief and formative year in New York followed, before returning home in 2014 to open Maison Verde.
Her cooking is austere, generous, and uncompromisingly seasonal. Tasting menus are written each morning from the day's market and rewritten by evening if the produce surprises her. There is no à la carte. There is no repetition.
